¾ oz Passion Fruit juice
½ oz Organic black tea syrup
Place an organic black tea bag previously

into a martini glass.

Inkaterra Birdwatching Tours 2014

Peru is renowned for its bird life, being home to a total of 1836 species – that’s 20% of the world’s registered bird species. The changing ecosystems throughout the country, from tropical rainforests to the Andean mountains, makes  it  the perfect environment for both visiting migrators and endemic species.

To  celebrate Peru’s status as one of the best birdwatching countries in the world, Inkaterra Hotels is launching two birdwatching itineraries to showcase the best ornithological gems Peru has to offer.

On the first 2 night itinerary guests have the chance to spot some of the 207 registered species that live in the Cloud Forest surrounding the Inkaterra Machu Picchu Pueblo Hotel. Guided tours and walks will give keen birdwatchers some of the best opportunities to spot particularly elusive species, and the area surrounding the Inca Citadel is a favourite for the Inca Wren.

Further to this, the gardens of the Machu Picchu Pueblo Hotel itself house the world’s largest collection of native orchid species, with 372 found within the gardens. Here hummingbirds, tanagears and the iconic Cock of the Rock can be found flitting around the picturesque setting.

The second bird-watching trip is a totally different experience, with three nights in the Amazon Rainforest of Southern Peru, in the Madre de Dios-Tambopata region. Here there are 540 bird species waiting to be discovered, together with other creatures like monkeys, three toed sloths, black caymans and the rare giant river otter.

Guided trails through the rainforest can help to reveal these natural treasures which are so often camouflaged against the surroundings. Staying at the Inkaterra Reserva Amazónica and journeying across Lake Valencia, the Madre de Dios river or high above the treetops on the Inkaterra canopy walkway, guests have plenty of opportunity to spot the amazing birdlife for which theses forests are home.

Spectacled Bears at ITMPP

It was a cloudy day, Fredy Apaza, storage personnel, was returning to Inkaterra Machu Picchu Pueblo Hotel from the train station with a guest. He was entering the hotel when he saw the top of the branches moving on the other side of the river in front of Café Inkaterra. Much was his surprise when he recognised the family of Spectacle Bears (Tremarctos ornatus), a mother with two small cubs. He reported the sighting by radio to the Ecotourism staff and hotel personnel. Guests passing also were lucky enough to see this unique sighting.

Angel Layme and Percy Jauregui were at the Ecocenter when the Public Areas Supervisor, Julio Huaylla, came to inform them that he had found a green snake near the NGO ITA office (Inkaterra Association). Since snakes can be very dangerous, they took the snake catching equipment to try and capture the snake. When they arrived they realized that it was a Dichrours drymoluber snake (or commonly known as “Chicotillo”). They were able to capture the snake and release it without any problems in a remote area.

As some of guests gathered in front of the Ecocentre to begin their excursion to the Andean Bear Rescue Centre, one of the travellers observed a big bird flying near the top of the mountains. Using their binoculars they could identify that it was the same bird that they saw a couple days ago; the Black and Chesnut Eagle (Oroacetus isidori). The eagle once again, was flying with the help of warm air drafts looking for food. Fortunately, their cameras were at the ready to capture it this time round.

Two new females join The Spectacled Bear Project

Two female spectacled bears (Tremarctos ornatus) named Kina and Josi have been welcomed into the Bear Rescue Project at Inkaterra Machu Picchu Pueblo Hotel. The two bears, who are twins, now have a new place to call home thanks to a collaboration between the Inkaterra Association (ITA)´s representative, resident biologist Carmen Soto at Inkaterra Machu Picchu Pueblo Hotel, the Wildlife Technical Administration (ATFFS), the Attorney General’s Office and the Forest Police.

Found in a local circus, the bears though docile and well fed by their tamer Ramiro Chávez, were chained to a box that served them as a shelter inside the circus tent. The owners cooperated with the authorities and organised the transfer from Arequipa to Inkaterra’s Machu Picchu Pueblo Hotel. Access to Peru’s renowned bear sanctuary is only possible by foot or train, and the Perurail railway company kindly helped the mission, allowing Kina and Josi to travel from Pachar Station to Machu Picchu Pueblo in a special wagon.

Have arrived at the Spectacled Bear Project at Inkaterra Machu Picchu Pueblo, Kina and Josi’s quarantine began. After settling into their new home, they were introduced to male resident bears, Yogui, Pepe and Coco. These bears were also found in inadequate circumstances, and now are kept at Inkaterra in a perfect living space for them, with sufficient daily nutrition of fruits and vegetables.

Coco, the youngest of the bears (3) was then transferred by rail to a fenced semi-captivity area at Chacra Inkaterra (the Inkaterra green farm) nearby. There, Coco will have a hectare to explore and feed himself from the nearby trees. After forty days, Josi will join Coco for them to get to know each other a little better…

With a vulnerable conservation status, the spectacled bear is under threat of extinction due to illegal hunting and the loss of habitats due to deforestation and increasing human populations. This then has a negative knock on affect for o ther local wildlife. Spectacled bears have many kilometres of territory and when feeding, spread seeds around their habitat. This contributes to the growth of plants that feed many other species. The disappearance of spectacled bears thereby contributes to the loss of this bountiful ecosystem.

As these bears lose their survival capabilities when under human influence, they cannot return to the wild immediately (in some cases they will not adapt ever again). Inkaterra’s Spectacled Bear Project provides the best conditions for these five bears and is an on-going project towards the conservation and reproduction of these species. With these two new female spectacled bears, there’s hope that more bears will be able to call this place home.

Q&A with Gustavo Borja, Executive Chef at Inkaterra Machu Picchu Pueblo Hotel

Tell us a little about your background and how you came to be at ITMP
My name is Gustavo Borja and I’m from Lima, Peru. I graduated from Le Cordon Bleu in Miami, Florida, and worked for the Marriott Marquis in Miami, for the Marriott in West Palm Beach Singer Island, and the National PGI resort in West Palm Beach. I´ve also worked as an advisor for several Peruvian restaurants that opened in Miramar, Florida, before moving back to Peru to work at Inkaterra.

What is the ethos behind the food at ITMP- Both in the main restaurant and at Café Inkaterra?
We want our guests to understand the country and all of its cultural aspects before returning home. To enhance the culinary experience and knowing that our guests are travelling so need to feel strong throughout their trip, we have designed a menu that is both healthy and authentic, selecting each flavour so that the final product is a complete gastronomic experience.

What is so special about Peruvian cuisine?
There are three main elements that make Peruvian cuisine so special: firstly, the variety and taste of our products that is not found elsewhere, like the yellow chili pepper, the potatoes, and the corn; secondly, it’s the ancestral ability to use herbs in the kitchen that gives Peruvians a special talent for seasoning. Finally, it is the influence of different cultures (Chinese, Japanese, Cantonese, Italian) that merge with our very special seasonings and has created a kitchen with a soul, a kitchen with its own identity that is distinct from any other cuisine.

What are the most important or iconic ingredients in Peruvian cuisine?
This question is very difficult because I think that Peruvian cuisine has a significant number of seasonings that make it so special. If I had to highlight one in particular, it would be the yellow peppers – I think this ingredient gives Peruvian cuisine its distinct flavour.

Tell us a little more about the diversity of Peruvian food
The gastronomy of Peru is the most diverse in the world, which is proven by the fact that it has the largest number of dishes. Lima is the gastronomic capital of the Americas and has developed greatly thanks to the incredible creativity in the dishes found here. The finest Andean, Afro-Peruvian, Eastern and Western cuisine are found in Lima. Recently, cooking has become Novo Andean, which incorporates the best products and Andean spices along with balanced dietary preparation.

How have you incorporated different ingredients and styles of cooking at ITMP?
At Inkaterra we create Peru’s ‘haute cuisine’, which underwent great change during the twentieth century through the Nouvelle Cuisine (or new kitchen).  This refers to a new way of cooking based on creativity and imagination. It resulted in a movement that freed the chefs and allowed the creation of new styles of cooking called “signature cuisine.”

Are there any other chefs particularly that have inspired you?
It is the passion for what I do that inspires me but if I had to name one person in particular it would be my mother.

What’s your favorite dish on the current menu?
The lamb shank; it´s a dish that contains lots of flavours, all beautifully balanced, and the technique we use creates a very soft meat. It comes with a sauce, which is fresh and uniquely flavoured.

And what drink would you wash it down with?
This dish would go very well with a cabernet sauvignon, Zuccardi Q (Argentinian wine). This line of wines is characterised by a fatty nuance that wraps the bobbin with well-balanced tannin shavings, and is a perfect combination of red fruits, pepper and wood.

Finally, if you could eat at any restaurant in the world, where would it be and why?
I don’t think I could choose a restaurant, but I would eat anywhere in Peru! The creativity and the diversity of food ensure Peru has an incredible variety of dishes, unlike anywhere else in the world. The creativity, advance in our cooking techniques, coupled with the assortment of dishes, put us in a privileged position.

It’s been said that the train journeys in Peru are some of the most spectacular in South America. Boarding the train in Cusco, you’ll travel along a mountainous backdrop to Aguas Calientes for Machu Picchu. Passengers are treated to jaw-dropping scenery as well as some rather unusual on-board entertainment. There’s even the chance to get some shopping done – watch out for the stewardess modelling some alpaca clothing for sale!

Adventure in the Andes

Guests spend three nights at Inkaterra Machu Picchu Pueblo Hotel, perfectly located for getting in touch with the Andean Cloud Forest and enjoying nature at its most exuberant.  The programme includes a selection of treks, including a two-hour hike along the Vilcanota River, a staggering walk through the Mandor Valley and a climb up Machu Picchu to the Citadel.   Guests are guided on a botanical walk through Inkaterra’s own native orchid garden and up to the hotel’s organic tea plantation to taste the camellia sinensis tea produced on site.

Spa treatments at the hotel’s Unu Spa are included, and have been chosen for their health-boosting qualities.  Drawn from traditional Andean techniques, Inka Purification starts with a lymphatic drainage massage using Coca leaf, an essential element of traditional Andean medicinal rituals. The purification ends with an Andean Sauna where stones are heated in a candle-lit eucalyptus hut in the forest.

Active in the Amazon

Next stop on the Walking to Wellness Programme is the luxurious Inkaterra Reserva Amazonica lodge near the Tambobata National Park. Only accessible via a 45-minute boat ride along the Madre De Dios River away from the city of Puerto Maldonado, it is a gateway to one of the world’s most remote rainforest environments.

Guests will spend three nights in luxurious cabañas, and by day be encouraged into the wild on a series of walks, treks and hikes.  These include an exploration of jungle trails, a trip to Lake Sandoval to spot the endangered Giant River Otter and pre-historic hoatzin bird, then hike to Gaminata Creek, home to piranha, caiman and turtles. The programme also incorporates a rainforest night walk and a climb up the mighty Inkaterra Canopy Walkway .

37th Anniversary Celebrations at Inkaterra

The end of 2012 saw the celebration of Inkaterra’s 37th anniversary. The last three decades have been filled with great memories and successes for Inkaterra who are considered a leader in luxury eco-tourism and conservation in Peru. In collaboration with the Inkaterra Association (ITA) the staff took to the main square on Sunday December 16th, in the town of Machu Picchu to mark the celebration.

The Inkaterra Fair was held in order to inform the population and visitors about the Historic Sanctuary of Machu Picchu and the different activities that take place at Inkaterra. The team spoke of each of their individual conservation programs that run throughout the year such as the rescue centre for the Andean bears. Dr. Phil Wittman, Research associate at ITA spoke to the children about the ecology of insects in the Machu Picchu area and the production of honey, vegetables and herbs that take place at Inkaterra Machu Picchu Pueblo. He also sensitised children to the efforts that Inkaterra achieve to benefiting the local environment and conservation.
